Karu Distillery

Launched in 2018 by husband and wife team Nick and Ally, Karu Distillery’s focus has always been to create quality spirits that highlight the science and art of the distillation process.

Based in the Devils Wilderness NSW the range has grown to include Affinity a contemporary Australian gin, Lightning a navy strength gin, Morita a chipotle vodka and Outcask a golden rum.

Karu is one of Australia’s most awarded distilleries, in 2021 Lightning gin took out the Trophy for best contemporary gin at the International Wines & Spirits Competition.

Soltera Rum

Come meet Australia’s only solo female rum distiller (that we know of!) and try her award-winning rums. Keri makes premium, small-batch spirits in Cabarita Beach, in the Northern Rivers region of New South Wales.

Double-distilled in a traditional copper pot still and aged in a variety of barrels, Soltera showcases the artistry of traditional rum-making combined with modern sustainability.

2 Birdz Liquor

Since 2017, Darby-Norris Distillery has been working on becoming the Premier Distillery in the Central North of Tasmania. What started out as a hobby has now become a passion and they are delighted to share it with you.

Lord Byron

Lord Byron Distillery makes its drinks in Byron Bay from ingredients grown and sourced in the region. The base ingredients in our drinks are pure water that comes from our family farm in the Byron Bay hinterland and molasses from the local cane growers.

We ferment, distill, mature and bottle on site ourselves, making our drinks truly unique.

Peninsula Distilling

A spirit brand loved and embraced as their own by our local community that embraces us due to our Zero Waste policy and support of local businesses. We are a privately owned Micro Distiller based on the Redcliffe Peninsula and we aim to be zero waste with our waste from the production going to local farmers in the Moreton Bay region. It is also our intention to be 100% renewable energy when we reach full production.

From the most awarded Rum Distiller of our time – Richard Seale, 4th Generation Trader/Distiller of R.L. Seale & Co – non other than Fousquare Rum Distillery have joined the Rumolution!

Foursquare Rum Distillery is located on a former sugar plantation that dates back to approximately 1720, within the tiny Caribbean island of Barbados. The distillery was re-opened by the Seale family in 1996, distilling operations and blending are currently directed by Richard Seale.

New Norfolk

From our home anchored in the Derwent Valley, we are reinvigorating and nurturing Australia’s love for rum.

Since 2019, New Norfolk Distillery have made their own ferments (predominantly molasses based), and distilled, bottled and aged their spirits on site. The small team now produces a range of modern rums, gins, liqueurs and other tantalising tipples.

Their superior quality is the result of generations of proven know-how and a tenacious desire to preserve traditional farming and production methods. The wild richness of this preserved terroir, its generous nature, its rich volcanic soil, its contrasting climate, its naturally filtered pure water and its extremely fresh sugar cane give all its character to this Martinique Agricultural Rum.

Germana

Germana is a handmade very artisanal Brazilian spirit made in the state of Minas Gerais. Produced from unrefined sugar cane juice and a little corn flour, it is regarded as one of the best quality Cachaças (pronounced “ka-shah-sa”) in this world. It is produced from estate-grown sugarcane cut by hand using machetes and immediately transported to the distillery where it is processed through the one and only electrical machine to extract the juice.

At Germana, Cachaça is a way of life, a passion.

Dos Maderas

Dos Maderas not only combines the best of two aging methods on opposite sides of the globe, but also brings two cultures together. On the one hand is the rum producing heritage of Barbados and Guyana in the Caribbean, and on the other is the rich sherry tradition of Jerez in Spain, and specifically that of the historical bodega Williams & Humbert.
